When it comes to cooking, my oven gets the least amount of attention. I was considering getting one for the rare occasion when I fry something but then I came across this post saying that paper towels on a plate work even better which is how I've always done it. Isn't that a good thing though? I've always thought it provides another level of depth/flavor when something is able to cook in the fat it releases.
I couldn't find many posts saying why they're helpful aside from preventing meats to soak in their fats/juices. I've seen recipes calling for them when cooking meats, but I've next experienced any issues when not using them.
