When it comes to cooking, my oven gets the least amount of attention. I was considering getting one for the rare occasion when I fry something but then I came across this post saying that paper towels on a plate work even better which is how I've always done it. Isn't that a good thing though? I've always thought it provides another level of depth/flavor when something is able to cook in the fat it releases.

I've seen recipes calling for them when cooking meats, but I've next experienced any issues when not using them.
